A menu that is completely vegan and without the four whites, giving a truly exceptional taste experience. This is the challenge that Michelin-starred chef Alessandro Tormolino since 2018, thanks to the wealth of experience he has accumulated, has decided to undertake, with more and more grit and conviction, proposing the “Natural Experience” menu and perfecting it year by year. An exhausting work that led to the refinement of menu proposals from season to season, with outstanding results, such as the recognition of Gambero Rosso that elected Sensi as the best vegetarian and vegan proposal in Southern Italy.

The four whites, what they are and why not to abuse them

Every dish contains at least one or more than one of them: the four whites are part of the daily routine of our table. Salt, sugar, milk and dairy products, and flour are in common use in our cuisine, to the point that it would seem almost impossible to do without them. Let alone prepare a starred menu that meets the tastes of patrons without the flavor that these foods easily impart to dishes.

It is, however, proven that the overuse that is made of these four foods can do serious damage to our bodies. For this reason, Chef Tormolino has decided to offer among his menus a tasting in which these 4 products are completely absent. A courageous choice, which focuses everything on the exceptional authentic taste of the vegetables that make up the dishes, the lively combination of contrasting flavors and the use of innovative processing techniques.

From natural cuisine to the Natural Experience menu

From this dream, “Natural Experience” was born. Chef Alessandro Tormolino’s basic goal, strengthened by his experience in national and international kitchens devoted to the use of excellent products and respect for Nature, was to bring to the table dishes in which vegetables and greens are always and only in season. In a food system in which the seasonality of vegetables, but also of fish products, is no longer taken into account, the choice of Sensi Restaurant’s starred chef is proving both reckless and successful at the same time.

The potential of this gastronomic project is to have recreated a menu that meets the taste not only of those who choose vegetarian and vegan cuisine, – for whom Sensi establishes itself as a vegan restaurant of excellence – but also contains dishes (without the four whites) that meet the needs of those with intolerances. Hence a delicious experience for refined palates-without salt, sugar, milk and dairy products, and flour-composed in the 2024 season of six courses (Red Turnip, Hummus, Dumpling, Pumpkin and Potatoes, Tortilla, Peach), in a gastronomic journey that is never mundane, with surprising combinations and completely plant-based ingredients offered with modern and refined processing techniques.

Vegetables at the center of Sensi’s culinary proposal

For you to have a delicious vegetable dish what is essential is that you use the best produce from a km 0 supply chain, grown and used according to seasonality, so that you savor its authentic taste. For this reason, Chef Alessandro Tormolino in recent years has woven closer and closer ties with a trusted local supply chain, so that the passage of the excellent product is direct from the producer to his starred kitchen.

The greatest challenge has been not to give up taste, while substituting salt and other whites: the use of the best available product, so as to have the best original taste of the product, is combined with the play of spices, aromas, contrasts, freshness, so as to enhance the taste of food without altering it, while giving up salt. Results that are the result of studies of the vegetable world that Chef Tormolino and his brigade do not stop investigating. A work aimed at an even more important mission: respect for nature and agriculture. The quality product is what really makes the difference in this gastronomic landscape. Its essence that arrives intact on the plate, while being processed in texture (to which vegetables lend themselves more than meats), in aesthetics, in the contrasting flavors to which it is juxtaposed.
